It is only available starting with iOS 16, so creating the device crashed on iOS 15. Fall back to the physical memory size like upstream plume does (renderbag#116).

Fixing some issues with non-macOS identified in #115 in a more proper way.
Also fixing up some deprecated API usage when targeting macOS 27.
