Multiple game screens (sim racing / flight setups)

Console Mode supports one game screen: the others are turned off or covered. Requested on Reddit (NRCENTER, shimmy_ow) for sim racing and flight setups with 2 to 3 screens on the same PC, e.g. 2 desktop monitors that turn off and 3 sim monitors that stay on.

Idea: let the user pick more than one screen to keep active, possibly as an easy toggle between "Console (single screen)" and "Sim (multiple screens)".

Open question: which screen is the primary one and where the launcher window goes.
