docs: keep the title plain and emoji every section heading

Part of the standardize-readme-and-contributing change.

What

  • README: the # title loses its emoji (# gitify.io); the section headings already carried the approved emoji.
  • CONTRIBUTING: every ##/###/#### heading now carries one leading emoji while the # title stays plain.

Notes

  • All five badges, every link and every code block are untouched; the # shell comments inside fenced blocks are not headings and are unchanged.
  • 🚀 Getting Started and 🛠️ Tests are shared vocabulary; the rest are one-off choices for this guide.

Aligns the README with the organization's approved heading emoji convention.
