refactor(compose): cleanup and centralize input handling

Description

• Removed unused compose dispatcher and render mode stuff, and other dead code
• Moved escape key handling into ComposeScreen
• Centralized version specific input overrides in ComposeScreen, and exposed them through handleKeyPressed, handleMouseSclicked
• OneconfigUiScreen and HudEditorUiScreen now use those to handle input without stonecutter branches
