docs: refresh armory demo GIF for the current web UI - #22

The old GIF predated the 8-section nav, the readiness board and the two-phase sync gate. Re-recorded against the current UI at the same 1000x625, covering: readiness board, canonical store + artifact view, drift matrix, drifted-cell diff, the review/apply gate with its plan token, all-green result, and the builder wizard. Filmed with user-flow (scenarios/loadout-armory-v2.yaml in that repo) against a throwaway sandbox HOME, never a real store or agent home. The README GIF predated the current UI — it showed the old nav and an
older sync flow. Re-recorded against today's UI at the same 1000x625
as the asset it replaces.
Same filename (
docs/assets/armory-demo.gif), so the README needs nochange and no stale asset is left behind — git history keeps the old one.
