Feat: When declaring `version-overrides` also update `pyproject.toml`

This is already implemented and is a duplicate of #85 (both were filed within seconds of each other).

The uv hook writes the version-overrides from mx.ini into [tool.uv] override-dependencies in pyproject.toml for uv-managed projects ([tool.uv] managed = true). It was implemented in commit 15c8301 ("When declaring 'version-overrides' also update 'pyproject.toml'. refs #85"), is covered by test_update_pyproject_writes_version_overrides, and documented in the README under "uv pyproject.toml integration".
